Recipe for Organic Chicken Cooked in Apple Cyder

Chicken is quite rightly one of the most popular meats throughout the whole world.
It is virtually fat free, is protein rich, super versatile and is the key ingredient in a lot of diet recipes. If you are able to get hold of an organic chicken, that will be better still, as it will be free from any hormones or other unhealthy additions. It Is also a great policy from an humanitarian point of view, as the majority of the supermarket chickens are kept in conditions that are absolutely shameful.

If you are not the dieting type, ther is no need for concern, there is more to chicken than low fat recipes. However, almost all chicken recipes will be, broadly speaking, more heart-healthy than similar recipes prepared using different meats, like beef or pork.

Here is a basic recipe that will most certainly please both family and friends.

The ingredient list is as follows:

One organic chicken (roughly 3.5 lb)
Two C. of cider
6 Fresh Apples (pared and quartered)
salt (as required)
pepper (as required)
1 teaspoon cornstarch
1/2 C. of whipping cream
1 Tbs of lemon juice
1/3 C. of butter
Two tablespoonfuls of olive oil
1/4 tsp. cinnamon (not obligatory)
4 green onions, (chopped fine)
Two cloves
1/4 teaspoon ginger
1 sprig of parsley, (chopped fine, for use as a garnish)
1/2 tsp. dried thyme
Two teaspoons of sugar

Preparation:

Wash the Organic Chicken and dry it well.
Combine some salt and pepper and then rub it into the organic chicken (interior and exterior)
Drizzle the lemon juice over the pieces of apple.

Melt half the butter in a skillet and mix in the olive oil.
Put half of the apple pieces into the pan and cook softly for five min. until browned slightly
Mix in the ginger and stir well, frying a short while longer to allow the ginger to develop it's flavours.
Stuff the chicken with mixture from the skillet and close-up the chicken by tying or by threading with a skewer.

Melt the remaining butter into the pan and then place the chicken in the pan and quickly brown the outside of the chicken, browning it all over.
Transfer the chicken to a large casserole pot with lid.
Take the apple that is left, the green onions, cinnamon, dried thyme, sugar and cloves and add them all to the frying pan.

Fry gently for 2-3 mins then add the apple cider and increase the heat to start the mixture boiling.

When the cider is boiling, pour it over the chicken in the casserole dish and cover the pot with foil or waxed paper before placing the lid on the pot.

Put in the oven and cook for about 45 minutes at 400F/200C

When the time is up, transfer it to a warmed plate to keep warm whilst the gracy/sauce is prepared.

Skim the fat from the contents of the casserole pot and then boil off the juices until there is approx one cup full left.

Pour in the whipping cream and cornstarch, mixing well until it is nice and thick.
Season with salt and pepper, and pour the sauce over the organic chicken

Sprinkle the parsley garnish over and serve.

If you are entertaining guests, you could serve the chicken with asparagus or runner beans and sauteed potatoes.
